I’m going to be installing a new tile shower including a tile pan. One of my questions is what mix of mortar do I use for the base? Also are there any opinions about sealing the floor?

I would install a vynal pan with no nails below water level.
I have used general purpose concrete miw with a layer of portland for protection from the aggreate on botton and layer of portland on top to give a smooth finish.
Slope from the wall to the drain just enough to have fall but not drastic enough to feel like your on a hill. Let it cure for 24 hrs and start tiling.
