I installed pre-hung doors, trimmed the doors to clear the plywood subfloor by one inch, but left the jambs resting on the floor as an aid in the installation. Is there any need to trim the jambs if I have the floors carpeted? And is a 3/4″ T&G plywood subfloor covered with pad and carpet an adequate floor?

Don't trim the jambs. You could cut the stops back on a 45. The floor is fine.
