Do a search for a fella here named WreckedAngle and read his story. Might be in the photo section. Where are you located?
Never mind...I read your bio and your tag line _after_ I replied, and now I see you're in the Big Sky state.
Whenever you are asked if you can do a job, tell'em "Certainly, I can!" Then get busy and find out how to do it. T. Roosevelt

The electrical is not to bad to do they cut channels through the panels from top to bottom to make your runs. Check out Eagle Panels, you can find then by doing a web search, the put together a good info pack.

This book, sold on this site, is what you are asking for:
SIPS, by Morley
http://www.taunton.com/store/pages/070482.asp
There is a builder here that fabricates them and builds with SIPS.
He orders this book for his subs, said best book for that.
There you can learn how to build the panels, protect from insects in the foam, frame with it, how to run wire and plumbing and all that.
Building with SIP's is a real pleasure! you'll be amazed at how quickly they go up with so little trouble!
Wire chases are typically put in the SIP at the factory usually to your specs.. They can be easily put in by yourself if you should happen to forget something (Well it's this way,... OK so I forgot!)
all you do is get yourself one of those cheapo spade bits with a bunch of extensions I think they come in 18 and 24 inch lengths.
drilling into foam isn't real tuff so aside from the white foam beads floating around afterwords, it's not a problem.
Just like a stick built house you don't put plumbing in an outside wall (and inside walls will all be stick built anyway)
The really nice thing is when you put the sheetrock up anyplace you put a screw will hold.. Nah! you don't need to mark for studs etc. just put up the sheets..
SIPs are a lot stronger and quieter than regular stick framing (not to mention the energy savings) plus it's much easier to keep everything square..
One final point in their favor is the resistance to fire. I have a video the manufactor gave me with a bonfire set in the corner of the room built with SIPs the sheetrock inside the walls were at 1500 degrees or so while the outside was barely a couple of degrees warmer..
Everything you need to know about SIPS, as well as a good forum:
