I am planning a kitchen renovation which involves repositioning the washer and dryer such that they will both be a little farther from their respective connections. Specifically, I have two questions:
1) The washing machine supply and drain hoses will need to be about 6′ long and will need to pass behind the dryer. Is there any problem with doing this?
2) The (electric) dryer will be 6-7′ from its 240V outlet. Can I use a longer cord, or must I move the outlet?

I vote for doing it right, and moving the plumbing/electrical hook-ups.
Extension cords (including super long water supply hoses) are generally to be avoided, and should only be used as temporary things until you can 'do it right' (which should be what a renovation is for!).
It might make it easier to decide if you tested your washer to see if the drain pump is powerful enough to push water that extra distance. That's the factor that would worry me the most. If it just doesn't work with any convenient size pipe or hose, then you have a second good argument for doing all that extra work than "it's just the right way."
If a washer drain hose is not set up right, it can continually siphon water from the tub and it will run all day without doing a load.
