I work in a different profession. However I own a house and have seen all kind of poor craftsmanship. It forced me to educate myself in this area too. From this experience and from my profession I would suggest to you:
- Learn from experience: Change jobs that give you the desired exposure to variety of projects. Or specialize in one area.
- Learn from self-education: Subscribe to magazines, read blogs, websites.
Here are few resources I came across recently, some examples:

http://www.tauntonstore.com/homebuilding.html?source=WH001UPS
This will give you lots of reading material quickly: http://www.tauntonstore.com/2014-fine-woodworking-archive-011336.html
Blogs/video like these: http://mattrisinger.com

Get certification....for example Tyvek, siding installer certification.
These are more general construction and remodeling resources but I am sure you can find more specialized resources for plumbing/electrical.
Good luck!
I would suggest that you apprentice yourself to a local remodeler or handyman.
