My initial thought is they are noisy. (But throw rugs here and there, or heavy curtains or stuffed chairs, etc. would make that a non-issue.) Other than that, I don't see a lot of problems.
Downside in a kitchen is that moisture can buckle the floor. How anal are you about cleanup, and making sure that dishes don't drip on the floor when loading/unloading the dishwasher?
Moisture in the kitchen. As spills run down the cracks they can, over time, cause discoloration.
Have you considered laminate? Some people love it, some hate it, but it is extremely durable in a kitchen.
If you don't reseal avery couple of years it can start to turn black from water. Ours is not looking too good under the kitchen sink after 7 years, but we don't have a rug there. A rubber backed rug would be a good idea by the sink. Pamilyn
