I have built my kitchen counter top. 2" x 26" x 11' Black Walnut for my cabin in the woods (unheated in the winter)

I want to seal it and not really concerned about a "hard" finish ( similar to a bar top). Not sure if Oil based polyeurothane is the way to go.

Thoughts??
