Most types are fine. Glossy tile is most common and easy to clean. Floor tile would be fine if it were not so rough it would scratch your dinnerware. Avoid tile with sharp edges and hand made tile with an uneven surface which could tip over glassware if set down on it.
You may not find bullnose tile available in floor tile so you'd have to figure out how you'd handle the edge of the counter.
